Method
 

  1. Place the pineapple chunks and mint leaves into a blender.
  2. Add lime juice and honey to the blender for extra flavor and balance.
  3. Blend until smooth and vibrant, with a slightly frothy texture, about 30 seconds.
  4. Pour the mixture evenly into popsicle molds or small cups, leaving a little space at the top.
  5. If using molds, place them in the freezer for 30 minutes to firm up slightly.
  6. Insert wooden sticks or plastic spoons into the molds once the mixture is slightly firm.
  7. Return the molds to the freezer and freeze for at least 4 hours or overnight until completely solid.
  8. To serve, run the molds briefly under warm water to loosen the popsicles, then gently remove them.
